Wild leeks aka ramps are in season, though not for long. Sustainably harvested by Wild Forbes Foods who bring it to markets they attend and are super popular amongst patrons. When they first start showing up on the tables the leaves are at their best for making pesto and anytime as an added leafy green in dishes, raw or cooked. As the bulbs grow they are fantastic for adding flavour to dishes or just sauté on their own with butter! The bulbs can last in the fridge for several weeks or in the freezer for off season use. They are have a punchy flavour, garlic/onion. Ramps are one of the many seasonal foods that grow in Ontario that you can only find at farmers’ markets.
